Spelt is an ancient grain that is highly recognized for its health benefits. Spelt has been widely used in health food throughout Europe. Pantanella Spelt Pasta has a high water solubility so nutrients such as fibre and iron are easily absorbed by the body and making it easier to digest. It also has a tough exterior and unlike other grains such as wheat, which means spelt protects itself from pollutants and insects.

Bring 5 quarts of water to a boil in a large pot over high heat. Sprinkle 1 or 2 tbsp. of sea salt to the boiling water to add flavor to the pasta. Place the dried spelt pasta into the water. Bring the water back to a fast boil. Stir the pasta immediately with a long-handled spoon to keep the noodles from sticking to each other.Boil the pasta for 8 to 10 minutes, depending on its thickness. The pasta is done when it is "al dente," or slightly chewy and firm in the center. Drain the pasta in a colander over your sink. Do not rinse the pasta.
