These green lentils have been through a slow soaking and sprouting period, so no pre-soaking is needed. This improves their digestibility, enhances their taste and texture, and reduces their cook time to just 10 minutes. These little powerhouses are an excellent choice for quick and simple meals, and work well as a meat replacement. Like other pulses, they cook by simply boiling in water.
They keep their shape and have a subtle taste that’s excellent at absorbing flavours. They are great in salads and tabbouleh, and hold up well in soups, stews, casseroles, side dishes and curries. Try them in a traditional Indian lentil dahl, or you can even mash them for a nutritious sprouted veggie burger or vegetarian meatloaf. Sprouted green lentils are especially delicious with aromatics like garlic and onion, and with a wide range of spices.

Storage and Shelf Life:
After sprouting, Second Spring carefully dry the beans back down to their shelf stable moisture levels. This means you can store them as you would store unsprouted beans – in a cool, dry place.
Once you cook your sprouted pulses, they should be stored in an air-tight container in the fridge.
